I suppose in some respects I wouldn’t choose to cook for one, but in others, whatever — I’m still cooking and it’s going to be just for me!
But that sometimes means that I can make 1 ziti casserole that could feed 6 people three times.
Solution? Freeze individual portions! I don’t know why I’ve never thought about this before.

Not only did I eat well two nights in a row, but now four times during the semester I’ll be able to come home exhausted, whip out the best ziti ever, and have a home cooked meal in minutes.

Yes! I need to start doing this. I majorly need to save money, and I get SO sick of eating the same thing for 10 meals in a row. Like the time I made a giant asparagus risotto on Sunday, and by Thursday vowed to never make risotto again. Totally could have just frozen some.
