Yeah yeah, it’s hot (spiked watermelon)
Hi, it’s hot. All I want to do lately is stress eat cold shrimp and watermelon and drink ice cold beer.
My mom has a phrase that she likes to ask my Dad before drinking a beer: “Is this the coldest beer in the world?” I can’t say I ever understood that until this week, when all I want to do is fan myself and sit on cold leather couches in air conditioning while complaining out loud to everyone in ear shot just how hot it is. I don’t handle heat well.
It doesn’t help that nursing school summer semester stress week #8 of 11 is well under way. It’s like the external temperatures are mirroring the internal pressure cooker temperatures we’re all feeling inside our brains.
BUT! I have a new roommate!
My fellow nursing student M moved in over the weekend and we’ve been having such a blast. We giggle at all hours of the day or night (yesterday morning I think my first giggle was at 6:12 a.m.), and it’s true: misery does love company. Studying for a final exam (in a course on health care delivery systems, EW) is a lot more fun when you’re quizzing each other and making up silly ways to remember information. I only wish she lived here the entirety of nursing school! To think how much more fun cramming for exams and getting up at 4:45 a.m. for clinicals would have been!
And if anyone else is as hot as I am, here is one of the most fantastic ways to have watermelon I’ve ever had the pleasure of trying (CCH, you can vouch for this recipe!)
Place watermelon in large bowl. Whisk fresh lemon juice and sugar in medium bowl until sugar dissolves. Whisk in vodka and crème de cassis. Season mixture to taste with salt. Pour mixture over watermelon. Cover and chill at least 1 hour and up to 2 hours. Sprinkle with chopped fresh mint and serve.
